the BEST *healthy* banana pancakes
I’m a breakfast food junkie, what can I say. Salty, sweet, spicy, savory… I like them all! I don’t discriminate when it comes to brekkie.
When I wake up with a craving for pancakes, I can’t ignore it. I MUST eat my damn cakes. After a few trials, I’ve perfected my recipe for these superbly stackable, delicious, and (bonus points) nutritious banana pancakes.
The best part about this recipe is that it’s simple, and chances are, you probably already have most of the ingredients in your kitchen. Depending on what else you’ve got in your pantry, this recipe also allows you to get creative (cough, cough, nudge, nudge…TOPPINGS).
All you need:
1/2 banana
1 egg
1/2 cup rolled oats
1/4 cup plant-based milk (I love macadamia )
1 tbsp real maple syrup (more if you like them sweeter!)
1/4 teaspoon salt
1/4 teaspoon cinnamon
(Optional) sprinkle of nutmeg
Add all of the ingredients into a blender. Blend away until smooth! Next, coat your pan (I prefer coconut oil, but you can use any oil or butter of choice). Set your stovetop to medium heat and let your greased pan heat up for a minute or so. Then, pour as much or as little batter as you’d like! Flip your pancakes once you see small bubbles forming, about two minutes. Flip and cook for 1-2 minutes on the other side.
SO. EASY. SO. DELISH. Enjoy topped with more maple syrup, honey, nut butter of choice, fruit, chia or hemp seeds, granola….the list goes on!
